With the Super Bowl less than a week away, do you know what you’re bringing to your Super Bowl party? Today, I’m sharing three Pinterest approved appetizers. I’m sharing one healthy, one 3 ingredient (super easy) and one truly football themed recipe with you.
After several recipe blogs I’ve realized I’m not a food photographer – forgive me lol, but I hope you get the gist. Also, working food into football shapes was the hardest part of these recipes. Hopefully I can perfect that by next year.
I found each recipe through Pinterest and I’m going to share the original info as well.
Buffalo Chicken Zucchini Boats (the “healthy” one)
What You’ll Need
- 4 zucchini (I used 3 large)
- 1 lb ground chicken
- 1/2 cup buffalo WING sauce
- 1/2 packet ranch seasoning mix
- 8 oz bag shredded mozzarella
- 9X13 baking dish
**don’t make this mistake! I accidentally purchased hot sauce and not buffalo wing sauce. The boats still came out okay, but they were SUPER spicy and hot sauce is a thinner consistency than wing sauce.
How To:
- preheat oven to 400 degrees
- wash off zucchini and slice in half long ways
- with a small spoon, scoop out inside of zucchini (includes the seed area), this creates the “boat”
- place zucchini boats on greased baking dish
- in a medium size greased pan, cook the chicken until no longer pink
- after chicken is cooked, mix buffalo wing sauce and ranch sauce until combined.
- with a small spoon, fill zucchini boats with chicken mixture.
- top zucchini boat with mozzarella cheese
- cover dish with foil and place in the oven
- remove foil and cook for an additional 5 minutes.
**If you want to add a bit more to the recipe, you can add additional ranch or bleu cheese.

Pepperoni and Cheese Football (the “easy” one)
What You’ll Need:
- cracker cut cheese
- pepperoni
- wheat thins
- rectangular dish
How To:
- form a football shape with wheat thins diagonal on a rectangular plate
- place a cheese layer on top of wheat thins
- add a pepperoni layer on top of the cheese layer towards the center
- slice a piece of cheese for the laces of the football
**I really think my football would have looked better if I used a rectangular plate, but I only had a round plate. The hardest part was honestly getting the shape of the football!
Jalepeño Popper Football Cheese Ball (the “truly football themed” one)
What You’ll Need:
- 16 oz softened cream cheese
- 8 oz shredded sharp cheddar cheese
- 1/3 c chopped green onion
- 1/2 c diced pickled jalepeño peppers
- 1/2 tsp garlic powder
- pinch of salt
- 3 slices of bacon
- 1/3 cup panko breadcrumbs
- 3 TBSP fresh parsley
- 2-3 fresh jalepeños
- 1 slice mozzarella or white cheddar cheese
**we opted out of the jalepeño because I wanted Archie to be able to eat this one, too! Tasted great :).
How To:
- Mix softened cream cheese, cheddar cheese, pickled jalepeño garlic powder, salt and chopped green onions together in a medium sized bowl. I used a large fork to mix together, but a hand mixer would work as well.
- scoop out the mixture onto a cutting board and roll into a ball. Similar to pizza dough. Flatten the top of the ball mixture with a spatula and begin shaping it into football shape. To do this, I pressed down on the middle first and then began shaping the sides with the end of the spatula. Leaving a picture below.
- chop bacon into thin pieces and cook in a pan until brown and crispy
- sprinkle bacon bits onto cream cheese football
- wipe off pan used to cook bacon, but keep just a bit of the bacon grease on the pan and pour in the panko crumbs. Keep on medium – high heat until panko is brown and crispy
- sprinkle panko over top cream cheese football
- slice jalepeño and sprinkle over top football
- press all ingredients into cream cheese football
- slice a piece of cheese for laces
- serve with pretzel or cracker of your choice
